Cordy Arellano, 88, of San Luis, Colo., passed away on Dec. 17, 2022, at the San Luis Valley Regional Medical Center with her son, Joseph by her side. She is survived by Son Joseph M Arellano of the family home; Daughter Lorrie Quintana (Serafin); Daughter in Law Margaret Cabrera Arellano; In-laws Fred Arellano and Julia Quintana Padilla; Grandchildren Christopher Gonzales (Jennifer); Anatniuq Molina (Jose); Carlos Arellano (Breana); Melaquias Arellano; and Corazon Arellano both of the family home; nine great-grandchildren, two step-great-grandchildren, and one on the way; and numerous nieces and nephews.
She was preceded in death by her Husband, Salvador M. Arellano, son Jacob J. Arellano, Parents Jose Jesus and Juanita Roybal Torres, In-laws Jacobo and Delfina Arellano; One brother and five Sisters: Eddie Torres, Fidelia Reyes, Mary Rodriguez, Libby Sanchez, Irene Quintana, and Polly Rodriguez. She was the last surviving member of the Torres and Roybal Family.
Cordy was a lifelong cook who worked in the schools’ systems for many years, first at Centennial in San Luis, Wamsutter, Wyoming, and Conejos Costilla Headstart in San Luis. She and her husband also ran the Liberty Café on Main Street in San Luis, Colo., before starting a family in 1969.
In later years she enjoyed baking and selling her wares to people near and far. She was a “partner” in the catering business with her son Joseph, and was an accomplished baker in her own right. She has several accolades for her accomplishments in her cooking and baking achievements. She also enjoyed her time spent at Bingo, Church functions, and the Costilla County Senior Citizens Center where she had many friends.
She was a member of The Sacred Heart Society and the Carmelitas associated with Sangre de Cristo Parish in San Luis. She and her husband also served as Mayordomos for the San Pedro San Pablo mission church in San Pedro Colorado for many years.
Viewing and visitation will be held on Wednesday, Dec. 21, 2022, from 1-4 p.m. at the Romero Funeral Chapel in San Luis. Vigil Service with Recitation of the Rosary will be held on Wednesday, Dec. 21, 2022, at 6 p.m. at Sangre De Cristo Catholic Church. Mass of the Resurrection will be held on Thursday, Dec. 22, 2022, at 12 p.m. also at Sangre De Cristo Church in San Luis. Interment will follow at the San Pedro Cemetery.
